She holds a degree in Food Engineering from the Federal University of Santa Catarina/UFSC (1991). After graduating, she worked as a research fellow in strategic areas of the National Council for Scientific and Technological Development /CNPq (Fermentation Processes) at the Laboratory of Biochemical Engineering at UFSC under the supervision of Professor Dr. Jorge Ninow. She worked at SENAI (National Service for Industrial Learning) in Chapecó, SC, as an instructor of the Technical Course in Food Sciences from 1992 to 1995. Afterwards, she returned to UFSC to do her master’s degree in chemical engineering in the area of bioprocesses/biotechnology (1997). In 2003 she obtained her PhD in Chemical Engineering from the University of Quensland, Australia, also in the field of bioprocesses. She worked as posdoctoral researcher during the period from 2003 to 2005 at the Laboratory of Biochemical Engineering at Federal University of Rio Grande do Norte (UFRN), in the area of production of bioproducts using insect cells. From 2011 to 2012 Dr. Pedrini worked as invited lecture/researcher at “Procédés Alimentaires et Microbiologiques” laboratory (UMR PAM), Agrosup Dijon, France, working on the encapsulation of bioactive substances in yeast cells. She is currently head of the Bioprocess Laboratory (LABIO/DEQ/LEA/UFRN) and a full professor at the UFRN. She has experience in the field of Food Science and Technology and Biotechnology.
